The Queen's royal garden parties are cancelled due to the coronavirus pandemic, but the Buckingham Palace pastry chefs want to make sure everyone has a little piece of the traditional event. So, they have shared their recipe for Victoria sponge cake!
The classic British recipe was posted on the Royal Family's social media accounts. It is a light sponge cake consisting of two layers of cake with filling in the centre. It is typically filled with strawberry or raspberry jam and cream. The Victoria sponge is not decorated, save for a possible dusting of icing sugar. And it is in fact named after Queen Victoria, who often had it with her afternoon cup of tea!

Remember to share your #royalbakes 핀핟하핣핖핕핚핖핟핥핤 핤핡할핟하핖: -3 eggs -150g caster sugar -150g unsalted butter -150g sieved self-raising flour -1/2 tsp of vanilla essence -100g jam (strawberry or raspberry) 핀핟하핣핖핕핚핖핟핥핤 핓핦핥핥핖핣핔핣핖핒핞: -150g softened unsalted butter -220g sieved icing sugar -1/3 vanilla pod or vanilla essence 필핖핥학할핕 핊핡할핟하핖: -Preheat the oven to 180C (375F, gas mark 4) -Grease and line two 8 inch cake tins (if you only own one tin, you can bake the sponge and slice in half) -Cream the caster sugar, vanilla essence and softened unsalted butter until light and fluffy -In a separate bowl whisk the eggs -Gradually add the beaten eggs, a little at a time, to avoid the mixture curdling -Sieve the flour and fold into the mixture -Divide the cake mix between the two cake tins and smooth -Place on the middle shelf of the oven and bake for approximately 20 minutes, until the cake appears golden brown -Insert a skewer and ensure it comes out clean -Remove the sponges from their tins and leave to cool 필핖핥학할핕 픹핦핥핥핖핣핔핣핖핒핞: -Cream the softened butter with the sieved icing sugar and seeds from the vanilla pod (or vanilla essence) 픸핤핤핖핞핓핝핚핟하 핥학핖 핔핒한핖: -Ensure that both sponges are completely cold before spreading a layer of jam onto the surface of one sponge -Spread a thick layer of buttercream on top of the jam ( if you prefer this can be done first) -Gently place the second sponge on top and gently press down -Sprinkle with icing sugar and serve with a pot of fresh English tea!
The pastry chefs included a list of the ingredients and instructions as well as a video on how to make the perfect Victoria sponge cake at home.
The simple and delicious cake is a perfect treat to bake while isolating at home during COVID-19, especially to celebrate summer. The recipe uses pantry staples including eggs, sugar, unsalted butter and flour.
The royal pastry chefs' recipe suggests using ready-made strawberry or raspberry jam, but bakers can use whatever they have in the cupboard. Or, if they are feeling ambitious, they can make their own!
The Buckingham Palace pastry chefs recommend eating the Victoria sponge cake like Queen Victoria, by serving it with tea. Additionally, they encourage bakers to share their recipes using the hashtag #royalbakes.
The royal pastry chefs previously shared a recipe for chocolate cupcakes in celebration of Her Majesty's 94th birthday on April 21. Additionally, they have provided a recipe for scones, which are another garden party favourite.

Remember to tag us in your #royalbakes creations! 헜헻헴헿헲헱헶헲헻혁혀: -500g Plain Flour -28g Baking Powder -94g Butter -86g Sugar -2 Whole Eggs -140ml Butter Milk -100g Sultanas - a type of raisin (Cover in hot water and leave to soak for 30 minutes) 헠헲혁헵헼헱: -Preheat oven to 180 C -Mix the flour, baking powder, butter and sugar together in a bowl, until a crumb is formed -In a separate bowl, whisk the eggs and buttermilk together -Add the liquid to the crumb mixture -Continue to mix the dough, until it is smooth -(Optional) Add the sultanas, and mix until evenly distributed 1Remove the dough from the bowl, flatten the dough and cover -Leave to rest for approximately 30 minutes -Roll out the dough to a thickness of 2.5 cm and cut to desired shape -Rest the scones for another 20 minutes -Gently egg was the top of the scones -Bake in the oven for 10-12 minutes until golden brown -Cool before serving with jam and clotted cream Enjoy!
